EU project shows chefs reducing food’s carbon footprint while shaping sustainable policies

Brussels — The European Union’s LIFE Climate Smart Chefs project is putting chefs at the forefront of the fight against climate change, transforming them from creators of taste into drivers of sustainable food systems.

At the 2023 event “Chefs at the Head of the Table”, experts and policymakers highlighted the role of chefs as agents of change. The event also saw the launch of the Vision 2030 roadmap, offering strategic recommendations to integrate sustainability into EU food policies, alongside the creation of the Climate Smart Chefs Award to recognize outstanding practices.

By 2024, the project delivered measurable outcomes. A total of 164 chefs from 27 EU countries were trained in climate-smart gastronomy, achieving an average 30 percent reduction in carbon and water footprints in their recipes. Chefs are now competing for awards in the categories of Most Sustainable Restaurant and Most Sustainable Recipe.

Innovations such as the Foodprint digital platform, which rates the environmental impact of recipes through a traffic-light system, and the “Zero Waste, More Taste” campaign, which promotes creative reuse of leftovers, are already reshaping professional kitchens across Europe.

The project will culminate in a final conference in Milan at the end of 2024, where award winners will be announced. Organisers expect the initiative to serve as a global model for sustainable gastronomy.

As Europe’s kitchens embrace climate-smart practices, chefs are proving that sustainability can go hand in hand with taste, health, and cultural tradition — ensuring a greener and more responsible future for food.
